About this wine
Vineyard and terroir
The grapes grow in the commune of Tollo at 130 m above sea level. The plots face south and southwest and have predominantly calcareous clay soils. The vineyards are farmed exclusively with organic methods, and the wine is certified organic.
Vinification
The grapes are harvested by hand at the end of September and carefully sorted before being destemmed and crushed. The must undergoes cold maceration at 8.5 °C, followed by gentle pressing and cold settling. Fermentation takes place at a controlled 18 °C.
Ageing
The wine rests on its lees in stainless-steel tanks for six months.
Tasting profile
Refined in character, with fruity and spicy notes on both the nose and palate.
