About this wine
Vineyard and terroir
The fruit grows in volcanic soils at 650 m above sea level on the northern side of the volcano. Yields are around 70 quintals per hectare.
Vinification
The grapes are harvested by hand in the second ten days of October. They go quickly to the winery in small crates and are hand-sorted on a special selection belt. After destemming and light crushing they are pressed. The gently pressed must is cold-settled, then fermented at a controlled 15–16 °C.
Ageing
The wine rests on fine lees for 3 months in stainless steel and concrete tanks.

The 2024 vintage is expected to be at its peak from 2025 to 2028.
