About this wine
Vineyard and terroir
The grapes grow in the Zottorinotto area, on the northern side of the village of Castiglione di Sicilia. Vineyard yields do not exceed 60 quintals per hectare.
Vinification
The grapes are harvested by hand during the middle ten days of October, placed in small crates and quickly transported to the winery. After hand sorting on a dedicated sorting belt, they are destemmed, lightly crushed and gently pressed. The must ferments without temperature control in 225-litre acacia barriques.
Ageing
The wine remains on its fine lees for approximately eight months in the same acacia barriques, followed by six months of maturation in the winery’s cellars after bottling.
