Vineyard and terroir
The grapes grow on the Moscato hills of southern Piedmont.
Vinification
The grapes are harvested early to preserve high acidity and encourage a bright floral bouquet. They are pressed slowly to limit oxidation that could affect their aromas, then crushed and filtered. The clarified juice is held at low temperature in stainless-steel tanks to prevent fermentation. Yeast is added, and fermentation takes place in an autoclave, where carbon dioxide develops naturally. Once the intended balance between alcohol and sugar is reached, rapid cooling stops fermentation. The wine is then filtered and bottled.
