About this wine
Vinification
The grapes are harvested at optimal ripeness and gently pressed to preserve aromatic purity. Fermentation takes place at a controlled temperature of 15 °C. In the following spring, liqueur de tirage is added to the base wine, which is then bottled for a second fermentation by the classic method.
Ageing
The wine remains on its lees for 10 months. After disgorgement, it rests for a further six months in a cool, dark cellar.
Tasting profile
Bright fruit expression is balanced by acidity. The aroma is complex, with delicate floral and fruit notes. The palate has richness, texture and creaminess, with aromatic depth and a balanced, harmonious character.
Serving and pairing
The producer recommends a long-stemmed glass.
