About this wine
Vineyard and terroir
The Cabernet Sauvignon comes from a 0.8-hectare parcel within the Anfiteatro vineyard at 500 metres above sea level. The parcel was planted in 1982, also described more generally as dating from the early 1980s, and is trained to spurred cordon. The introductory description associates it with Galestro and silite, while the technical section identifies the soil as Pietraforte.
Grapes
The 2020 blend is 85% Cabernet Sauvignon and 15% Sangiovese. Cabernet Sauvignon supplies breadth and intensity, while Sangiovese contributes freshness and linear definition.
Vinification
Spontaneous fermentation takes place in stainless steel with indigenous yeasts.
Ageing
The wine matures for 26 months in tonneaux, followed by 12 months of bottle ageing.
Technical data
The 2020 has 14.5% alcohol, total acidity of 5.7 g/L, residual sugar of 0.0 g/L and total SO₂ of 99 mg/L. Production information appears in two different forms: 2,448 bottles and 75 magnums in the principal vintage description, versus 2,954 bottles and 120 magnums in the technical details.
Tasting profile
The nose is clean, pronounced and fruit-led, opening with bramble, ripe blackberry and cooked blackcurrant. Blackberry and plum are joined by red liquorice and mint. The palate is full-bodied, layered and satisfying, with concentrated stewed black-fruit and liquorice flavours. Vigorous, chewy tannins are harmonious and well integrated. The long, intense finish carries a roasted-coffee echo. The wine combines energy and freshness with the structure required for cellaring, yet its shape is already precise.
Serving and pairing
Serve at 18–20°C and decant for at least one to two hours. Pair with grilled or roasted lamb, wild boar or beef, rich pasta dishes with truffles or wild mushrooms, or mature cheeses.
Vintage notes
The 2020 harvest achieved an ideal balance of maturation in the Cabernet Sauvignon parcel. The vintage was awarded 96 points by Vinous and 92 points by James Suckling.
