About this wine

Vineyard and terroir

The vineyards are located in the municipalities of Chiopris-Viscone and San Giovanni al Natisone, on alluvial soils. Planting density is 6,000 vines per hectare, with spur-pruned cordon training.

Grapes

100% Sauvignon.

Vinification

The grapes are mechanically harvested and undergo eight hours of cold maceration in a horizontal press. The must is then clarified by settling and fermented in stainless steel tanks at a controlled temperature of 15°C.

Ageing

After fermentation, the wine is not racked. It remains in the same stainless steel tanks for approximately four months at a constant temperature, followed by bottling and a period of bottle ageing before release.

Tasting profile

Straw yellow in colour. The intense bouquet recalls sage, pepper and hazelnut. The palate is fresh and floral, with considerable persistence.

Serving and pairing

Serve at 11–12°C. Pair with vegetable- or fish-based risottos, crustaceans and seafood. Ageing potential is 3–4 years.
