About this wine

Vineyard and terroir

The grapes are grown in the hills of Veneto without pesticides or herbicides.

Vinification

The grapes are harvested entirely by hand. The white grapes are vinified in the manner of red grapes, with several days of skin contact and pump-overs. Secondary fermentation takes place in the bottle with natural lees and no added sulfur dioxide. The wine is unfiltered.

Ageing

Further time on the lees in bottle produces sediment that continues to develop.

Tasting profile

Skin maceration gives the wine an old-fashioned hue tending towards orange. It is firm and tart, with a strong, assertive character and a bold, distinctive flavour. The foam is persistent and the bubbles lively, while the lees contribute rustic, fresh aromas.

Serving and pairing

For a clear pour, allow the sediment to settle. For a cloudy pour with a more pronounced flavour, gently shake the bottle.

Label / history

The wine belongs to Riccardo Zanotto’s Col Fondo range of unfiltered wines. The name means “with sediment at the bottom” and derives from Venetian dialect. Zanotto began his journey more than fifteen years ago with a Col Fondo sparkling wine, among the first of its kind. The style was then known as sur lie, meaning “on the lees,” but he and other producers sought to revive the term col fondo. The bottle is sealed with a crown cap.
