About this wine
Vineyard and terroir
The grapes grow in the hills of Veneto without pesticides or herbicides.
Vinification
The fruit is harvested entirely by hand. The wine is unfiltered, with secondary fermentation taking place in the bottle on its natural yeast sediment.
Ageing
Further time on the lees produces a living sediment that continues to develop in the bottle.
Tasting profile
Vibrant and complex, with a persistent mousse and pronounced mineral character. The developing sediment contributes rustic, fresh aromas. Allowing the sediment to settle gives a clear pour; gently shaking the bottle produces a cloudy wine with a more distinctive taste.
Serving and pairing
Pair with simple dishes. It may be served clear after the sediment has settled or cloudy after the bottle has been shaken gently.
Label / history
“Wild” refers to the wine’s wild, lively character. It belongs to Riccardo Zanotto’s “Col Fondo” range of unfiltered wines. His work with sparkling Col Fondo began more than fifteen years ago, when the style was commonly called “sur lie.” He and other producers revived “col fondo,” a Venetian dialect term for wine “with sediment at the bottom.” The bottle is sealed with a crown cap.
