Vineyard and terroir
The fruit is grown in Castelnuovo Berardenga, in the province of Siena, at an altitude of 450 m. The Cabernet Sauvignon is planted on stony, well-drained soils, while the Merlot grows in limestone soils rich in silt and clay.
Vinification
The grapes are harvested by hand at optimal ripeness, then sorted by hand, destemmed and crushed. Each variety ferments separately in conical vats at a controlled temperature of 27 °C for 7–10 days, followed by 10 days of post-fermentation maceration. The wines are then blended.
Ageing
The wine rests for 12 months in new barriques and a further 12 months in large French oak casks. After bottling, it matures for another 12 months in the winery’s cellars.
