Vineyard and terroir

The grapes are grown in Castelnuovo Berardenga, in the province of Siena, at 450 metres above sea level. The vineyards face south and southeast, with stony, well-drained soils.

Grapes

Sangiovese is blended with a small proportion of Cabernet Sauvignon.

Vinification

The grapes are harvested by hand at optimal ripeness, then sorted, destemmed and pressed. Each variety is fermented separately in conical vats at a controlled temperature of 27 °C for 7–10 days, followed by 10 days of post-fermentation maceration. The varieties are then blended.

Ageing

The wine matures in oak barrels for 30 months, followed by 12 months in bottle.
