Vineyard and terroir
The grapes grow in the vineyards surrounding Novacella Abbey, near Bressanone on the southern side of the Alps, at 600–700 m above sea level. Mineral-rich soils, high elevation and a cool climate support a long ripening period extending well into autumn.

The grapes are carefully selected.
Vinification
Harvest takes place in late October. The wine is made using traditional methods at the monastery winery.
Ageing
The wine rests for six months in the monastery cellars.
Tasting profile
Intense aromas and flavours are accompanied by mouthwatering fruit acidity.
Label / history
Wine has been made at the abbey since the 12th century. Its northern vineyards were replanted with white varieties from 1902, beginning with Silvaner and later including Gewürztraminer.
