Vineyard and terroir
The vineyards surround Novacella Abbey near Bressanone, in the northernmost wine-growing area on the southern side of the Alps. They lie at approximately 600–900 m above sea level. Mineral-rich soils, a cold climate and a long ripening period extending well into autumn contribute to intense aromas and flavours and lively, fruity acidity.
Grapes
The wine is made from carefully selected fruit.
Vinification
The grapes were harvested in early October and vinified in stainless-steel tanks using traditional methods.
Ageing
The wine rested for six months in the monastery cellars.
Tasting profile
Light and fruity on the nose, with intense flavours and pleasant, appetising fruity acidity.
