Vineyard and terroir
The selected fruit is grown in South Tyrol at 600–650 metres above sea level. The wider vineyards around the monastery have mineral-rich soils, a cold climate and a long ripening season extending well into autumn.
Grapes
The Sauvignon Blanc grapes are selected before vinification.
Vinification
Harvest begins in early October. Fermentation uses only natural yeasts and takes place in stainless steel tanks at a controlled temperature of 20 °C.
Ageing
The wine ages in stainless steel tanks before being bottled in April. It then rests for three months in the monastery cellars.
