Vineyard and terroir
The vineyards surround the monastery near Bressanone, in the northernmost wine-growing area on the southern side of the Alps. They lie at approximately 600–899 m above sea level. Mineral-rich soils, the high elevation and a cold climate contribute to intense aromas and flavours and fruity acidity. The long ripening period extends well into autumn.
Vinification
The grapes are harvested from October. Vinification takes place in stainless-steel tanks, with a small portion fermented in oak barrels.
Ageing
The wine rests for six months in the monastery’s cellars.

Refreshing, with refined acidity, intense aromas and flavours, and fruity acidity.
Label / history
Monks began making wine at the abbey in the 12th century. The northern vineyards were replanted with white varieties from 1902, beginning with Silvaner.
