Vineyard and terroir
The vines have a south-west exposure and grow in calcareous-clayey Tortonian soil. They are trained on counter-trellises and medium-short Guyot pruned, at an average density of 5,000 vines per hectare. Thinning approximately 30% of the clusters limits production to about 1 kg per vine.
Grapes
100% Barbera.
Vinification
Fully ripe grapes are harvested into small, perforated 20 kg crates and rigorously sorted by bunch. The fruit reaches the cellar and is crushed within a few hours. Fermentation takes place at a controlled temperature of approximately 32°C, with repeated, gentle pump-overs. Skin maceration averages 250 hours. The young wine is held in barriques, where spontaneous malolactic fermentation follows.
Ageing
24 months in wood.
Technical data
Alcohol: 14.5% vol. Total acidity: 6.2 g/L. Residual sugar: 3 g/L. Net dry extract: 30 g/L.
Tasting profile
Deep garnet red. The clean, expansive and ethereal nose combines rose, vanilla and spice. Dense and voluminous on the palate, it is balanced and harmonious, with a very persistent finish.
Serving and pairing
Store the bottle horizontally and serve at 18°C. The wine can mature for 10 years from harvest. Pair with red meats, game, mature cheeses and spicy cheeses.
Label / history
Amabile Drocco was known at home as “Amabilin” when he was young. The label revives that family name as a tribute to the estate’s origins. The wine’s initial directness and intensity, followed by sweetness, mirror the character associated with the grown-up Amabilin, the producer behind it.
