Vineyard and terroir
The grapes grow in Novello on east-southeast-facing, calcareous soils of Tortonian origin. The Le Pernici hillside, also in Novello, is planted to Nascetta and Barbera at 350 m above sea level. Its vines are approximately seven years old and originate from clonal selection.
The vines are vertically trained and medium-short pruned using the Guyot system. Average planting density is 5,000 vines per hectare, and green harvesting is used to restrict production.
Grapes
100% Nascetta, an aromatic white variety native to Novello. This ancient, nearly lost grape produces Cascina Adelaide’s only white wine.
Vinification
Fully ripe grapes are picked into small, perforated 20 kg crates and undergo rigorous bunch selection. Transport to the cellar and crushing take place within a few hours. Approximately 10 hours of skin cryomaceration precede a 10-day fermentation at a controlled temperature of about 16 °C. The young wine is then kept in stainless steel on its fine lees.
Ageing
Six months sur lie in stainless steel, with bâtonnage once a week.

Tasting profile
Bright yellow with green reflections. The aromatic profile combines resin, pineapple, orange blossom, exotic fruit, banana and honey, with the same characters continuing onto the palate. Lively acidity highlights green-citrus flavours, while an underlying mineral note supports unusual longevity and structure for a Piedmontese white.
Serving and pairing
Serve at 8–10 °C. It works as an aperitif and with fish or shellfish dishes. It can develop positively for five years.
