Vineyard and terroir
The grapes come from Vittoria in the province of Ragusa, south-eastern Sicily. The organically farmed vines grow at 230 metres above sea level in medium-textured red soil derived from sub-Apennine sands of Pliocene origin, with a limestone-siliceous character. The vines average 25 years of age, are Guyot-trained and planted at 5,000 vines per hectare.
Grapes
60% Nero d’Avola and 40% Frappato di Vittoria.
Vinification
Harvest takes place from late September into the first days of October. Fermentation proceeds spontaneously on the skins with indigenous yeasts.
Ageing
Maturation takes place in Slavonian oak barrels and continues in bottle.
Label / history
Cerasuolo di Vittoria combines Frappato and Nero d’Avola within the rules of its denomination. Its modern history is linked to the foundation of Vittoria in 1607, when Vittoria Colonna Henriquez-Cabrera granted land to the first settlers on condition that additional land be planted to vines. The denomination received DOC status in 1974 and DOCG status in 2005. COS regards Cerasuolo di Vittoria as the focus of more than forty years of research, work and reflection.
