Vineyard and terroir
The grapes grow in the hilly classic Valpolicella area, in the northwest of the province of Verona. The landscape is of Neolithic origin, with thin, stony soils. The vines average between 20 and 35 years of age.
Vinification
The grapes are harvested by hand in early October. Selected, slightly overripe bunches are carefully dried until early February, then destemmed, gently pressed and fermented over a long period. The wine is subsequently decanted.
Ageing
The wine ages for two years in special new oak botti, followed by 12 months in new French oak barriques and a further 6–8 months in bottle.
