Vineyard and terroir
The 2 ha vineyard lies in Castelletto, Monforte d’Alba, with a northerly exposure. The technical sheet places it at 330 m above sea level. Its young, shallow, calcareous soil derives from marine sediments of the Serravallian-period Lequio formation, dating to approximately 12 million years ago; it contains silt and clay and is rich in sand. The vines are 30 years old.
Grapes
100% Dolcetto.
Vinification
The grapes are harvested by hand in late September. Fermentation and maceration take place on the skins in rotary fermenters for approximately 5–7 days, with temperature controlled between 25 and 30°C.
Ageing
The wine matures for 10 months in 50 hl stainless-steel tanks and remains there until bottling.
Tasting profile
Bright ruby red. The nose is fresh, with red-fruit and black-cherry notes. The palate is fruity and dry, with good body and soft tannins. Its youthful, fresh and velvety style makes it ready to drink upon release.
Serving and pairing
Pair with cold meats, starters, pasta dishes, white meat or pizza.
