Vineyard and terroir

The fruit comes from cooler sites in Appiano, Cortaccia and Pochi, at 370–520 metres above sea level. The vineyards lie on glacial deposits, with gravelly, limestone-rich soils and a loamy upper layer.

Grapes

Pinot Noir.

Vinification

Harvest timing is selected to preserve crispness, freshness and precision. Shrivelled and overripe berries are deliberately excluded. Whole grapes, stalks included, are used during vinification, contributing freshness and vibrancy. Fermentation proceeds with indigenous yeasts.

Ageing

The wine matures for approximately 12 months in a combination of stainless-steel tanks, large oak casks and concrete vessels.

2023 vintage. Alcohol: 11.5% vol.

Tasting profile

Garnet with a ruby shimmer. The subtly expressed nose is fruity and spicy, with a delicate woody note. Medium-bodied, elegant and light-footed, the palate is silky, fresh and refined-bitter.

Serving and pairing

Pair with white meat, poultry, duck, venison and mild cheeses. Best enjoyed within 2–6 years.

Mimuèt means “to my taste” in Ladin, one of Alto Adige’s three official languages.
