Vineyard and terroir

A cru from the Capitel Foscarino vineyard at the summit of the volcanic Foscarino hill in the municipality of Soave. The soil is volcanic tuff. Vines are trained to Guyot and alberello.

Grapes

Goldtraminer leads the blend, supported by Chardonnay and a selection of aromatic and semi-aromatic resistant PIWI varieties. Exact proportions are not specified; the selection is intended to express the cru’s origin, style and terroir.

Vinification

The harvest involves meticulous selection, with grapes collected in small crates. Vinification begins with gentle pressing under inert atmosphere and settling of the resulting must, followed by fermentation at 16°C.

Ageing

Weekly bâtonnage is employed; the maturation vessel and duration are not specified.

Technical data

Production is 18,000 bottles in 750 ml format. The stated ageing potential is 20 years.

Tasting profile

Pale straw yellow. The aromatic profile combines summer white fruit, grapefruit and lily of the valley, with an Alsatian inflection. The palate is fresh and savoury, with the aromatic character and salinity associated with the resistant varieties.
