Vineyard and terroir
The vineyards lie in the municipalities of Monteforte d’Alpone and Soave, on the Foscarino and Zoppega hills. Their soils consist of volcanic tuff in some parcels and calcareous material in others. The vines are trained using the Guyot system.
Grapes
A blend of Goldtraminer and Garganega.
Vinification
Only the ripest bunches are selected at harvest. Once brought to the winery, the grapes are dried in a well-ventilated room. By December, they have developed the desired amount of noble rot. Around Christmas, the bunches are gently pressed under oxygen-free conditions, and the concentrated sweet must ferments in small Allier oak barrels.
Ageing
Following fermentation in small Allier oak barrels, the wine matures for eight months in stainless-steel vats.
Technical data
Production is approximately 13,000 bottles, all in 375 ml format. Cellaring potential is 25 years.
Tasting profile
The colour ranges from golden yellow to an intense gold with amber highlights. The aromatic profile is notably complex: the technical description evokes syrup-preserved apricot, mango, papaya, candied citron, apple and yellow peach, while the main wine presentation adds passion fruit, honey and pear. Sweetness and a creamy texture are balanced by good acidity and a pronounced savoury, mineral drive. The finish recalls zabaione.
Serving and pairing
Pair with lobster, foie gras pâté, cheeses or pastries.
Label / history
The name refers to the votive shrines, known locally as Capitelli, that surround the estate’s vineyards.
