Vineyard and terroir
The Cabernet Sauvignon vineyard lies at the foot of Zoppega hill in the municipality of Monteforte d’Alpone, in the historic Dugale Realda locality. The area was a possession of the Church in the fifteenth century. The soil is volcanic tuff, and the vines are trained to cordone speronato.
Grapes
100% Cabernet Sauvignon.
Vinification
Selected clusters are picked slightly late and collected in small crates. The grapes are crushed and destemmed before fermentation at 28°C. Maceration lasts 10 days, after which the pomace is separated. Malolactic fermentation takes place in Allier barriques.
Ageing
The wine matures for 18 months in Allier barriques.
Technical data
Production is 6,000 bottles in 750 ml format. The stated ageing potential is 25 years.
Tasting profile
Brilliant ruby red. Elegant and intense, with licorice, red fruit, redcurrant, walnut husk, black pepper and vegetal notes. The palate is supple, balancing the wine’s fine tannins with those contributed by the wood. Marked freshness carries through a persistent finish.
Serving and pairing
Recommended with roasts, braised dishes, mixed grilled meats and long-aged cheeses.
Label / history
The name refers to Dugale Realda and the history of the locality where the vineyard stands, once a Church possession in the fifteenth century.
