Vineyard and terroir
The fruit comes from estate vineyards in the municipalities of Monteforte d’Alpone and Soave, around Capitel San Vincenzo. The sites combine volcanic-tuff soils with limestone. Vines are trained to Guyot and alberello.
Grapes
Garganega is blended with aromatic and semi-aromatic grapes, including traditional varieties and resistant PIWI cultivars grown on the estate. Exact proportions are not specified.
Vinification
Harvest runs from September through the first three weeks of October. The grapes undergo gentle pressing under inert atmosphere, followed by natural cold settling of the must and fermentation at 16°C.
Ageing
The wine matures for six months in stainless steel at low temperature, with weekly bâtonnage.
Technical data
Annual production is 360,000 bottles. Available formats are 375 ml and 750 ml, and the stated ageing potential is 10 years.
Tasting profile
Bright straw yellow. Expressive and creamy, with medlar, lemon blossom, grapefruit, boxwood and white-peach aromas. The palate is fresh, forthright and persistent, balancing elegance and refinement before a juicy finish.
Serving and pairing
Suitable as an aperitif and with Italian antipasti and first courses, crustaceans, mollusks, fusion dishes and spiced cuisine.
Label / history
The wine is named after San Vincenzo Ferreri, patron saint of vine growers.
