Vineyard and terroir
The grapes are selected from vineyards in Umbria, where yields do not exceed 100 metric centners per hectare. The region encompasses climates ranging from Mediterranean to continental. Summers are generally dry and warm, winters are mild, and rainfall is low, with most falling in eastern Umbria; humidity consequently remains low.
Vinification
The grapes are harvested by hand from the last week of September to the first week of October. Fermentation and maceration last 10–15 days, with pumping over twice daily to extract aroma and colour from the skins.
Ageing
The wine matures for 12 months in French oak barrels, followed by at least four months in bottle in the winery’s cellars.
