Vineyard and terroir
Castagnolo comes from approximately 15 ha of south-west-facing vineyards at 200–300 m above sea level. The sedimentary soils contain marine fossils, pebbles and calcareous agglomerations. The 30-year-old vines are trained to Double Guyot at a density of 4,500 vines per hectare, with an approximate yield of 70 quintals per hectare.
Viticulture is inspired by biodynamic principles. Herbicides and pesticides are not used; fertilisation relies on biodynamic preparations, shredded pruning material and green manure from grasses and legumes. Quality selection is carried out bunch by bunch in the vineyards.
Vinification
The grapes are harvested manually between August and September. Fermentation takes place in stainless steel with indigenous yeasts for 20 days at 15–20 °C.
Tasting profile
Brilliant straw-yellow. The bouquet is fruity, intense and complex. The palate is mineral and persistent, combining natural drinkability with structure. The wine is conceived as a modern interpretation of the Orvieto Classico tradition.
Serving and pairing
Serve at 10–12 °C. Pair with seafood appetisers, first courses, boiled or grilled fish and white meat, or pour as an aperitif.
