Vineyard and terroir
The approximately 11 ha of vineyards lie at 200–300 m above sea level with a north-eastern exposure. Their sedimentary soils contain marine fossils, pebbles and calcareous agglomerations. The 30-year-old vines are trained to Double Guyot at a density of 4,500 vines per hectare, with an approximate yield of 60 quintals per hectare.
Viticulture is inspired by biodynamic principles. Herbicides and pesticides are not used; vineyard fertility is supported with biodynamic preparations, shredded pruning material and green manure made from grasses and legumes.
Grapes
A Bordeaux-style red blend. The individual varieties and proportions are not specified.
Vinification
The grapes are harvested manually in September. Fermentation takes place in stainless steel with indigenous yeasts for 20 days at 25–30 °C. Malolactic fermentation occurs spontaneously with indigenous bacteria.
Tasting profile
Brilliant ruby red. The bouquet is intense and balanced, with mulberry and other fruit aromas. The palate is elegant, harmonious and silky, combining body with an accessible character.
Serving and pairing
Serve at 16–18 °C. Pair with first courses, grilled or spit-roasted red and white meats, game and wild-meat dishes.
