Vineyard and terroir

Grechetto RAW comes from approximately 6.5 ha of south-west-facing vineyards at 200–300 m above sea level. The sedimentary soils contain marine fossils, pebbles and calcareous agglomerations. The 30-year-old vines are trained to double Guyot at 4,500 vines/ha, with an approximate yield of 60 q/ha.

Viticulture is biodynamically inspired. Herbicides and pesticides are not used; vineyard fertility is maintained with biodynamic preparations, shredded pruning material, and green manure based on grasses and legumes.

Grapes

Grechetto, presented as the area’s oldest traditional variety and associated with local cultivation since Etruscan and Roman times. Its naturally high antioxidant content shaped the wine’s extended skin-contact method.

Vinification

The grapes are picked manually in September and October. Indigenous yeasts drive fermentation in stainless steel, with the structured production data specifying 20 days at 15–20 °C. Fermentation and maceration on the skins form a six-month process, during which the wine is moved manually as the phases of the moon change. No sulphites are added. Malolactic fermentation is spontaneous and uses indigenous bacteria.

Ageing

The wine rests on its lees and yeasts, which help preserve its structure and character over time.

Technical data

Umbria IGT White. Certified organic and identified as vegan. The finished wine is cloudy and unfiltered.

Tasting profile

Deep straw yellow with a naturally cloudy appearance. The aroma is intense and strongly varietal. The palate is soft, enveloping and powerful, with substantial body; bottle development adds roundness and greater organoleptic complexity.

Serving and pairing

Serve at 12–15 °C. Pair with varied first courses, shellfish, boiled or roasted fish, fried dishes and white meats.
