Vineyard and terroir
Moscato comes from approximately 2 ha of estate vineyards with South-West exposure at 200–300 m above sea level. The sedimentary soils contain marine fossils, pebbles and calcareous agglomerations. The 30-year-old vines are trained to Double Guyot at a density of 4,500 vines per hectare, with a yield of approximately 30 quintals per hectare.
Viticulture is biodynamic-inspired. Herbicides and pesticides are not used; fertility is managed with biodynamic preparations, shredded pruning material and green manure made from grasses and legumes.
Grapes
Moscato. The golden clusters dry naturally on the vine under the Umbrian sun. Warm sunlight at the beginning of September concentrates their sugars, while cool evening air intensifies the variety's aromas.
Vinification
The grapes are harvested manually in September. Fermentation takes place in stainless steel with indigenous yeasts for 20 days at 15–20 °C.
Tasting profile
Amber to deep yellow in colour. The floral nose combines tropical fruit with peach and apricot. The palate evokes apricot, citrus, preserves and almond, with sweetness, persistence, finesse and elegance.
Serving and pairing
Serve at 12–14 °C. Pair with baked desserts, fruit tarts, almond or walnut tarts, and biscuits. It can also be enjoyed on its own as a sipping wine.
