Vineyard and terroir
Polvento comes from approximately 2.5 ha of vineyards at 200–300 m above sea level with a north-eastern exposure. The sedimentary soils contain marine fossils, pebbles and calcareous agglomerations. The 30-year-old vines are trained to Double Guyot at 4,500 vines per hectare and yield approximately 60 quintals per hectare.
The vineyard was designed with an emphasis on fruit quality. Competition between grass and vines naturally restricts yields and contributes to concentrated, fruit-rich musts. Viticulture is inspired by biodynamic principles, without herbicides or pesticides; biodynamic preparations, shredded pruning material and green manure from grasses and legumes are used for fertility.
Vinification
The fruit is harvested manually in September. Fermentation proceeds with indigenous yeasts in stainless steel for 20 days at 25–30 °C. Malolactic fermentation is spontaneous and driven by indigenous bacteria.
Tasting profile
Intense ruby red. The nose is penetrating, intense and pleasantly fruity. The palate is elegant, balanced and smooth, with full body and concentration. Polvento is conceived for considerable longevity.
Serving and pairing
Serve at 16–18 °C with grilled or spit-roasted red meats, game, wild-meat dishes and aged cheeses.
