The fruit comes from the estate’s vineyards.
Vinification
The grapes are harvested in late September and destemmed. Fermentation takes place in stainless-steel tanks at a controlled temperature for 8–10 days, followed by malolactic fermentation.
Ageing
The wine rests in bottle in the winery’s cellars until the following spring.
