Vineyard and terroir
The fruit comes from Pagliaro ’88 in the hills of Montefalco, at approximately 400 m above sea level. The clay vineyard faces east–southwest and is wire-trained at a density of 2,400 vines per hectare. The reported yield was 80 q/ha.
Grapes
The 2007 blend comprises equal proportions of Grechetto, Malvasia, Chardonnay, Sauvignon and Garganega.
Vinification
The grapes were harvested by hand on 15 September 2007 and transported in small stainless-steel containers. They were destemmed on the day of picking, then fermented and macerated on their skins for 15 days without added sulfur.
Ageing
The wine matured for one year in stainless steel.
Technical data
Alcohol: 13.5%. Production: 4,500 individually numbered 750 ml bottles.
Tasting profile
Soft, balanced and viscous, with aromas recalling fresh bread and dried figs. Extended skin contact gives the wine an intense color; the absence of added sulfites contributes a lightly oxidative character. Its profile is described as complex, persistent and intense.
Serving and pairing
Recommended with antipasti, pasta, fish and roasted white meats.
Vintage notes
The 2007 season was described as “authoritative.” A mild winter and favorable March advanced budding by about ten days. Heavy rain arrived at the end of May, followed by an exceptionally dry summer. The deep roots at Pagliaro maintained adequate vine hydration. Ripening advanced substantially, prompting an unusually early mid-September harvest of healthy, undamaged grapes and producing an intense wine.
