Vineyard and terroir
The grapes come from San Valentino ’88 in the hills of Montefalco, at 400 m above sea level. The clay vineyard faces east–southwest and is wire-trained at approximately 2,000 vines per hectare. The reported yield was 70–75 q/ha.
Grapes
70% Sangiovese, 15% Montepulciano and 15% Sagrantino.
Vinification
The grapes were harvested by hand in the third week of October 2005, transported in small stainless-steel containers and destemmed on the day of picking. Fermentation and maceration on the skins lasted 30 days.
Ageing
The wine matured for 36 months in stainless steel and four months in bottle. It was bottled in September 2008, three years after harvest, then rested away from light and noise before deliveries began in February 2009.
Technical data
Alcohol: 13.0%. Production: 8,865 individually numbered 750 ml bottles.
Tasting profile
Dry and smooth, with aromas of fresh apple. The wine develops slowly and was considered approachable at approximately 30 months.
Serving and pairing
Recommended with pasta, red meats and cheese.
Vintage notes
The 2005 season was described as “unforgettable.” Summer brought little rain and remained dry through harvest. The wine’s sensory concentration, slow maturation without forced stabilization and appropriate cellaring support an estimated life of 8–10 years.
