Vineyard and terroir

The 2005 fruit came from Campo Pipparello in the hills of Montefalco, at 400 m above sea level. The clay vineyard faces east–southwest and is wire-trained at approximately 3,000 vines per hectare. Yield was 65–70 q/ha. The balanced summer brought little rainfall and dry conditions; the vintage was judged “Very BIG!” and of high quality.

Grapes

60% Sangiovese, 25% Montepulciano and 15% Sagrantino.

Vinification

The grapes were picked by hand in the second week of October and carried in small steel containers. They were destemmed on the day of harvest and fermented on the skins. Fermentation and maceration lasted 42 days. No forced stabilization was used.

Ageing

The wine matured for 12 months in steel and 24 months in large 20 hl oak barrels, followed by at least 12 months in bottle. The 2005 vintage was bottled at the end of September 2008, approximately 36 months after harvest, and released after its subsequent bottle rest.

Technical data

Alcohol: 13.0%. Production comprised 9,520 individually numbered 750 ml bottles.

Tasting profile

Dry and soft, with aromas of vanilla, juniper and minerals. Its rich organoleptic composition develops slowly.

Serving and pairing

Suitable for pasta, red meat and cheese. The 2005 vintage was considered ready after four years and capable of showing well at 15–20 years of age.

The 2005 growing season combined balanced summer weather, low rainfall and dry conditions, supporting slow maturation and long ageing potential.
