Vineyard and terroir
The grapes grow in the Alpine foothills in the communes of Conegliano and Valdobbiadene, at 165 m above sea level. Most vineyards face southwest and have a planting density of 5,000 vines per hectare. The hillside soils contain clay and limestone at varying depths, beneath topsoil formed from glacial deposits rich in organic matter. The climate is temperate, with cold winters and hot, dry summers. Pronounced differences between daytime and nighttime temperatures help preserve acidity and promote aromatic development.
Vinification
The grapes are harvested during the first half of September with minimal use of machinery. After destemming, they are gently pressed. Of the must, 60% is placed in wooden vats and 40% in stainless-steel tanks. Fermentation takes place naturally with the skins for three weeks, without added sulfur dioxide. The wine is bottled unfiltered for secondary fermentation.
Tasting profile
Delicate and aromatic, with fine bubbles and elegant acidity.
Serving and pairing
Suitable as an aperitif and with fish dishes, seafood or desserts.
