Vineyard and terroir
The grapes grow at an average altitude of 180 m in Carpesica, southwest of the Conegliano and Valdobbiadene hills. The vineyard's clay-limestone soil is rich in glacial moraine deposited by the ancient Piave glacier, which descended from the Fadalto saddle between Mount Pizzoc and Mount Visentin. Herbicides are not used, and biodiversity is actively preserved.
Vinification
The grapes are harvested in the second half of September, destemmed and gently pressed. After the must settles naturally, it ferments at 18–20 °C. The winemaking is intended to retain as much of the fruit's natural character as possible. The wine is made sparkling by the Italian method in a 100 hL steel autoclave over approximately two months.
Ageing
The wine rests on its fine lees for 1–3 months.

Soft and delicate.
Serving and pairing
A large Prosecco glass is recommended. A flute should be avoided because its narrow shape prevents the bouquet from opening fully.
Label / history
The wine takes its name from the small Church of San Fermo beside the vineyard.
