Vineyard and terroir
The grapes grow in Carpesica, southwest of the Conegliano and Valdobbiadene hills, at an average elevation of 180 m. The clay-limestone soil is rich in glacial moraine deposited by the ancient Piave glacier, which descended from the Fadalto saddle between Mount Pizzoc and Mount Visentin.
Vinification
The grapes are harvested by hand from the second ten-day period of September, then destemmed and gently pressed. The must settles naturally before traditional fermentation and a short, light maceration. The wine retains its natural yeast sediment and is generally bottled with the deposits when the first spring warmth arrives, shortly before or after Easter.
Tasting profile
Natural yeast deposits give the wine a gentle haze and a savoury edge. Its aromas and flavours develop greater complexity with suitable storage.
Serving and pairing
Serve in a large Prosecco glass rather than a flute, allowing the bouquet to open fully. For a clear pour, keep the bottle still when opening and decant into a carafe. For a lightly clouded pour, serve directly into the glasses; the wine begins clear and gradually incorporates the natural yeast sediment.
