Vineyard and terroir
The fruit comes from Carpesica, on the southwestern side of the Conegliano and Valdobbiadene hills, at an average elevation of 180 m. The vineyard has clay-limestone soil rich in glacial moraine deposited by the ancient Piave Glacier, which descended from the Fadalto saddle between the Pizzoc and Visentin mountains. Herbicides are not used, and the estate seeks to protect biodiversity.
Vinification
The grapes are harvested in the second half of September, gently pressed and clarified by static settling. Primary fermentation takes place at a controlled 18–20 °C. Secondary fermentation follows in a stainless-steel autoclave using the Charmat method and lasts about two months, preserving the purity of the aromas and the delicacy of the bubbles.
Ageing
Before secondary fermentation, the wine rests on its fine lees for one to three months, developing softness and additional complexity.
Tasting profile
Fine bubbles accompany a soft texture and a fresh, lively floral and fruity character. The gentle nose has notes of flowers, apple and pear. The palate combines balanced freshness with delicate fruity sweetness and concludes with an elegant finish.
Serving and pairing
Serve as an aperitif in a large Prosecco glass. The producer advises against using a flute, as it restricts the bouquet.
