Vineyard and terroir
The grapes come from the company's vineyards in Chianti Classico, in Tuscany. The climate is mainly continental, with mild winters and hot, dry summers. Marked temperature differences between day and night let the grapes ripen slowly, reaching phenolic maturity while keeping their natural acidity. The soils are well-structured clay with a high limestone content.
Vinification
The grapes are harvested by hand at optimal ripeness, usually in early October. At the winery they are destemmed and gently pressed. Fermentation and maceration take place in temperature-controlled stainless steel tanks. Maceration lasts 18–20 days, with daily pump-overs. Malolactic fermentation follows.
Ageing
After malolactic fermentation the wine ages in barriques for 3–6 months, which gives it a rounder, softer character with added depth and complexity.
