Vineyard and terroir
The fruit comes from Bottega’s vineyards in the Valpolicella area of Veneto, northeastern Italy. The area comprises valleys bordered by hills and the Adige River, at the foot of the Alps. Once part of the seabed, its soils contain abundant calcium and limestone deposits. The climate is temperate.
Vinification
The grapes are usually harvested by hand from late September to early October and sorted at the winery. They undergo appassimento on racks in a well-ventilated room, concentrating their sugars and phenolic compounds; by the end of February, they have lost at least half their weight. After gentle pressing, fermentation proceeds slowly with selected yeasts at a controlled temperature in closed tanks, with daily pumpovers. Malolactic fermentation follows.
Ageing
The wine matures for 48 months in French oak barrels of various sizes.
