Vineyard and terroir
The grapes come from selected red varieties grown around Sticcianese, Arcille and Campagnatico in the province of Grosseto. The vines are trained to spur-pruned cordon. Harvest takes place in the last week of September.
Grapes
90% Sangiovese, 5% Cabernet and 5% Alicante.
Vinification
The grapes are crushed and destemmed, followed by controlled-temperature maceration with daily pump-overs in contact with air. The technical wording indicates that these pump-overs do not continue through the end of fermentation.
Ageing
The wine matures in stainless-steel tanks and is bottled during the year following harvest. It then spends six months ageing in horizontally stored bottles. The cork permits limited exchange with the surrounding environment as the wine develops.
Tasting profile
Intense ruby red, potentially evolving toward garnet with bottle age. The aroma is vinous and fruit-driven, with characteristic notes of cherry, raspberry and blackberry. The palate is harmonious, dry, savoury and moderately tannic, with an elegant body; bottle development adds roundness.
Serving and pairing
Serve at 15–18°C. Pair with earthy first and main courses, grilled or stewed pork and beef, or wild boar.
