Vineyard and terroir
The Vermentino is grown in vineyards in the Grillese area of Grosseto. A lower-yielding clone with more pronounced varietal character is used. Short pruning helps contain vigour and regulate crop level. The vines are trained to spur-pruned cordon, and harvest takes place in late August.

100% Vermentino.
Vinification
The grapes are vinified as a white wine, with fermentation at a controlled temperature of approximately 18°C.
Ageing
Maturation takes place in temperature-controlled stainless-steel tanks.
Tasting profile
Straw yellow with greenish highlights; in particular years, the colour may range between golden and green-tinged hues. The bouquet is broad, fresh, intense and refined, combining fruit and floral notes. The palate is dry, warm, fresh, moderately savoury, delicately aromatic, fine and pleasing. Alcohol levels may become substantial in some growing seasons, while the expressive bouquet remains a consistent feature.
Serving and pairing
Serve at 6–8°C. Pair with fresh cheeses, light cured meats, fish, molluscs, crustaceans, roast fish, risotto, omelettes, mushrooms and white meats.
