Vineyard and terroir
The Sangiovese is grown in the Poggio la Mozza vineyards in the Grillese area of the municipality of Grosseto. The vines are trained to spur-pruned cordon, and harvest takes place in late September.
Grapes
100% Sangiovese.
Vinification
After light crushing and destemming, the must macerates at controlled temperature for approximately 15 days. Daily pump-overs encourage the extraction of colour and aromatic compounds.
Ageing
The wine matures in stainless-steel tanks and is bottled during the year following harvest. It then spends six months ageing in horizontally stored bottles before release.
Tasting profile
Deep ruby red, with the potential to develop garnet tones in bottle. The nose is vinous and fruity, recalling cherry, raspberry, ripe red fruit and woodland berries. Harmonious and full on the palate, with an elegant body and measured, sweet-edged tannins that balance the wine’s alcoholic and acidic components.
Serving and pairing
Serve at 15–18°C. Pair with flavoursome pasta and other rich first courses, beef, pork, game, and mature sheep’s- or cow’s-milk cheeses.
