Vineyard and terroir
The fruit comes from Campo Lavei in the hills of Montecchia di Crosara. The soils are stony and predominantly calcareous. Yield is 90 quintals per hectare (9 t/ha), and harvest takes place in early October when the grapes have reached optimal ripeness.
Grapes
45% Corvina, 40% Corvinone and 15% Rondinella.
Vinification
The grapes are destemmed and crushed. The must remains on the skins for a 10-day fermentation in steel tanks, after which the wine completes fermentation in wooden casks.
Ageing
Maturation in wood lasts between eight and ten months.
Technical data
The current product page gives an approximate alcohol content of 14.5%, while the technical sheet gives approximately 14%. Production is approximately 30,000 bottles, offered in 750 ml and 1,500 ml formats.
Tasting profile
Deep ruby red. Aromas of blackberry, blackcurrant, cherry and other small berries are joined by spice from maturation in wood. The palate is soft, with good tannic structure balanced by a fresh sensation.
Serving and pairing
Serve at 16°C with grilled or spit-roasted meats, very mature cheeses, or roast game. It is particularly suited to meat-led cuisine.
