Vineyard and terroir
The Sangiovese is organically grown on a dedicated 6.5 ha plot at Il Caggio, at 320–350 m above sea level. The vineyard has southeast and southwest exposures. Its clay and slate soils contain deposits of calcareous marl. The vineyard’s design allows it to absorb five times more CO₂ than it produces.
Grapes
The Sangiovese clones were selected from the family’s experimental vineyard.
Vinification
Fermentation begins spontaneously with wild yeasts.
Ageing
The wine matures for 24 months in tonneaux, 70–80% of them new, and in a 15 hl barrel. Before bottling, it rests for an unspecified period in concrete vessels, followed by further ageing in bottle.
Tasting profile
Powerful and energetic, with a rich texture and a long, savoury finish.
