Vinification
The grapes are harvested in early October and undergo gentle crushing and destemming. Brief contact with the skins lasts approximately six hours, followed by a 15-day fermentation at 12°C.
Tasting profile
Bright cerasuolo pink. The nose is intense, persistent and fruit-led, with strawberry and other small red-fruit notes. Medium-bodied, intense and balanced, with good persistence.
Serving and pairing
Serve at 14–16°C. Pair with raw shellfish, vegetarian dishes, fresh cheeses, Asian cuisine or white meats. Best enjoyed young.
