Vineyard and terroir
The Cabernet Sauvignon and Merlot are grown at Campo alla Sughera in Bolgheri, on sandy-clayey, alluvial soils. Planting density is 9,500 vines per hectare, and the vines are trained to spurred cordon.

Vinification
The grapes are harvested by hand into 15 kg crates, carefully selected and pressed. Vinification takes place for 15–20 days in stainless-steel tanks at a controlled temperature of 28 °C.
Ageing
Adèo matures for 12 months in French oak barriques and then spends at least six months refining in bottle.

Tasting profile
Bright ruby red. The intense, direct and complex aroma combines herbaceous notes with black fruit and black cherry. Plum, ripe fruit and spices emerge on the palate, accompanied by lightly toasted nuances from oak maturation. Full-bodied, warm, soft and mineral, it has balanced tannins and a licorice finish.
Serving and pairing
Serve at 18 °C. Pair with red meat served rare, grilled or roasted; pasta all’amatriciana; beef or game ragù; substantial risottos; and medium-aged cheeses.
