Vineyard and terroir
The grapes are grown in the provinces of Agrigento and Palermo, at altitudes of 200–600 m. The medium-textured, sandy-silty soils are alkaline owing to the presence of limestone. The vines are 12–15 years old, with yields not exceeding 10 t/ha.
Vinification
The grapes are harvested in September. Whole bunches are pressed, and the must is settled at low temperature. Fermentation takes place in stainless-steel tanks at a controlled 16 °C for 15 days. Malolactic fermentation is prevented.
Ageing
The wine matures for three months in concrete vessels, followed by one month in bottle.

Typical Inzolia aromas accompany a savoury, mineral palate.
