Vineyard and terroir
The grapes are grown in the provinces of Agrigento, Caltanissetta and Palermo. The vineyards lie at 200–600 m above sea level on medium-textured sandy-silty soils whose limestone content makes them alkaline. The vines are 12 years old on average, and yields do not exceed 9 t/ha.
Vinification
Harvest runs from mid-September to mid-October. After destemming, the grapes are gently crushed, then fermented at around 26 °C in small steel and concrete tanks, with pumping over four times a day. Maceration lasts 6–8 days. Malolactic fermentation is completed before ageing.
Ageing
The wine rests for eight months in concrete tanks, followed by three months in the winery’s cellars after bottling.
Tasting profile
Typical fruit aromas are joined by hints of black pepper. The tannins are smooth, well balanced and pleasant.
